🥗 Mummy’s Magic Kimchi Grilled Paneer Bowl

🧺 Ingredients
For the Grilled Paneer:
- 200 gm paneer, cut into thick slices
- 1 tbsp Mummy's Magic Kimchi brine (liquid from the jar)
- 1 tsp soy sauce
- 1 tsp honey
- 1/2 tsp black pepper
- 1/2 tsp roasted cumin powder
- 1 tbsp olive oil or sesame oil
For the Kimchi Stir-Fried Vegetables:
- 1/2 cup Mummy's Magic Kimchi, chopped roughly
- 1/2 cup bell peppers (red, yellow, green), sliced
- 1/4 cup carrot, julienned
- 1 tsp Mummy's Magic Garlic Chilli Crunch
- 1 tsp soy sauce
- 1 tsp vinegar or lime juice
For the Base:
- 1.5 cups cooked brown rice, or quinoa
- 1 tbsp butter or ghee
- Salt to taste
Toppings (optional):
- Toasted sesame seeds
- Spring onions or microgreens
- Extra Mummy's Magic Kimchi for garnish
- A drizzle of Mummy's Magic Garlic Chilli Crunch oil

👩🍳 Method
Step 1: Marinate & Grill Paneer:
- Mix Kimchi brine, soy sauce, honey, pepper, and cumin in a bowl
- Add paneer slices and coat them well. Let it marinate for 10-15 minutes
- Heat oil in a grill pan or tawa; cook paneer till golden brown on both sides
- Brush with a little Garlic Chilli Crunch oil while grilling for smoky garlic flavour
Step 2: Stir-Fry the Veggies:
- In a hot wok/ kadhai, add 1 tsp oil and toss bell peppers and carrots for 2 minutes
- Add chopped Mummy's Magic Kimchi and 1 tsp Garlic Chilli Crunch oil; stir-fry for 1-2 minutes
- Add soy sauce and vinegar; toss again
- Remove from heat - veggies should stay crunchy and bright
Step 3: Prepare the Base:
- Warm rice or quinoa in butter/ ghee
- Season lightly with salt for a comforting base
Step 4: Assemble the Bowl:
- Add warm rice as the base
- Top with stir-fried vegetables
- Place grilled paneer slices on top
- Garnish with sesame seeds, spring onions, and a spoonful of Mummy's Magic Kimchi
- Finish with a drizzle of Garlic Chilli Crunch oil for that final magic touch.
