🧄🔥 Smoked Salsa Stuffed Baingan

Serves: 2-3 | Prep Time: 15 min | Cook Time: 20-25 min

🛒 Ingredients

  • 6-8 small round baingan (eggplant)
  • 1/2 boiled & mashed potatoes
  • 3 tbsp Mummy's Magic Smoked Salsa
  • 1 small onion, finely chopped
  • 1 green chilli, finely chopped
  • 1/2 tsp cumin (jeera) powder
  • 1/2 tsp garam masala
  • 1/2 tsp red chilli powder
  • Salt to taste
  • 1 tbsp chopped fresh coriander
  • 2 tbsp refined vegetable oil (for frying)
  • A pinch of asafoetida (hing)
  • Mustard seeds - 1/2 tsp for tempering

🍳 Instructions

Step 1: Prep the Baingan

  1. Wash the baingan and make a crisscross slit on the bottom of each, keeping the stem intact
  2. Soak them in salted water for 10 minutes to reduce bitterness. Drain and pat dry

Step 2: Prepare the Filling

  1. In a bowl, mix mashed potatoes, Mummy's Magic Smoked Salsa, chopped onion, green chilli, and spices
  2. Add salt and chopped coriander. Mix well to form a thick, flavourful filling

Step 3: Stuff the Baingan

  1.  Gently stuff each baingan with the prepared mixture using your fingers or a small spoon
  2. Press the filling in firmly without breaking the baingan

Step 4: Cook

  1. Heat oil in a wide, non-stick pan. Add mustard seeds and hing
  2. Once they sputter, place the stuffed baingan in the pan
  3. Cover and cook on medium-low heat for 15-20 minutes, turning occasionally to ensure even cooking
  4. The baingan should be soft and slightly charred on the outside

🌿 To Serve

Garnish with extra chopped coriander and a drizzle of Smoked Salsa for an extra burst of flavour. Serve hot with:

  • Phulkas or parathas
  • Steamed rice and dal
  • A bowl of chilled curd or raita
