🥗 Kachumber Salad with Dahi Ki Chutney Dressing

Kachumber is a crunchy, refreshing Indian salad elevated with a tangy and creamy Dahi Ki Chutney dressing - the perfect side for any meal!

🧺 Ingredients (Serves 2–3):

For the salad:

  • 1 medium cucumber, finely chopped
  • 1 medium tomato, finely chopped (firm & deseeded)
  • 1 small onion or shallots, finely chopped
  • 1 small carrot, grated (optional)
  • 1 small capsicum, finely chopped (optional)
  • 1-2 tbsp fresh coriander leaves, chopped
  • 1-2 tsp lemon juice
  • Salt to taste
  • Pinch of chaat masala (optional)

For the dressing:

  • 2 tbsp Mummy's Magic Dahi Ki Chutney
  • 1 tbsp thick curd or Greek Yogurt
  • 1/2 tsp extra virgin olive oil (optional)
  • 1/4 tsp freshly ground black pepper
  • A pinch of cumin powder

🥣 Method:

  1. Make the dressing: In a small bowl, whisk together Mummy's Magic Dahi Ki Chutney, curd, pepper, cumin powder, and olive oil until smooth and creamy
  2. Mix the salad: In a mixing bowl, add chopped cucumber, tomato, onion and other veggies. Toss gently
  3. Add the dressing: Pour the chutney dressing gently over the veggies. Toss well to coat evenly
  4. Finish: Sprinkle with lemon juice, salt, and chaat masala. Garnish with fresh coriander leaves
  5. Serve: Serve chilled as a side dish, or enjoy it as a light, wholesome snack!
