
🌮 Smoked Salsa Chicken Tacos

Serves 4 | Prep Time: 15 minutes | Cook Time: 20 minutes
🛒 Ingredients:
For the Chicken:In
- 2 boneless, skinless chicken breasts (about 300 - 400 gm)
- 1/2 bottle Mummy's Magic Smoked Salsa (plus extra for topping)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
For the Taco Assembly:
- 8 small soft taco tortillas
- 1/2 cup shredded lettuce
- 1/2 cup chopped onions
- 1 avocado, sliced
- 1/2 cup fresh coriander leaves
- 1/4 cup crumbled feta or grated cheese (optional)
- 2 lime, cut into wedges
- 2 tbsp Mummy's Magic Garlic Chilli Crunch oil (optional, for a spicy kick)
🔥 Method:
- Marinate the Chicken: In a bowl, mix the chicken with olive oil, Mummy's Magic Smoked Salsa, garlic powder, paprika, salt, and pepper. Let the chicken marinate for at least 30 minutes (longer is better)
- Cook the Chicken: Heat a pan over medium heat. Cook the chicken for 5-6 minutes per side or until cooked through and slightly charred. Let it sit for 5-6 minutes before cutting it into strips/ cubes.
- Warm the Tortillas: Heat tortillas in a pan or directly over the flame for a few seconds on each side until warm and pliable
- Assemble the Tacos: Lay out warm tortillas. Add a base of shredded lettuce, top with smoked Salsa, chicken, avocado, onions and cheese, as you wish.
- Finish & Serve:
Drizzle with extra Mummy's Magic Smoked Salsa and a touch of Garlic Chilli Crunch for heat. Squeeze fresh lime juice over the top and serve immediately!
